The 40 has more maps but is that the only differnce? The other question is are they good? Seems like most posts here (and other sites) are for melgeon or garmin.

First: welcome to the world of geocaching.

To your question: The 30 doesn't have a barometric altimeter or electronic compass. I don't use the altimeter with my Garmin, but the compass is really useful. So in short: If it is one of the two, choose the 40.

I see that it's price is about $260. You should be able to get a Garmin GPSMap 60csx for about the same or just a little bit more, and I am sure that this would be a good choice (I don't know about the Delorme).

I've not used a DeLorme yet and also (as with KFL) use a Garmin 60CSx.  However, I have been hearing a lot of good things about the DeLormes from some of the caching podcasts I listen to.  I recently told someone that I'd seriously consider replacing my GPS with a DeLorme PN-40 if it died.

Even if you don't use an iPod or other mp3 player, I'd highly recommend the following podcasts, though there are other good ones...

Podcacher
The Geocaching Podcast
Cache-A-Maniacs

You can always listen online, if you are not using a portable player.

The first two, in particular offer reviews and info on various caching equipment.  The third is a weekly (or so) interview with different geocachers and you can learn a lot from hearing their insights.
