The 'Spy' function is to allow a member to track the log activity of another members cache. When you click the 'Spy on this Cache' button on a cache listing page it adds you to the list of members that are tracking the progress / log activity for that cache and each time another member makes a log entry you would receive an email notifying you of this. Keep in mind that cache owners always receive an email notification of log entries to caches they have listed so there is no reason to Spy on your own cache. Doing so will only result in double notifications.
Should you later decide you no longer want to spy on a particular cache you have an option to recall your spy from within your MyNavicache Account Profile page.
