Welcome to one of the best hobbies there are.
As to which model to buy, that I think is mostly a matter of taste (and money). I would always recommend the Garmin GpsMap 60csx. I heard a lot of good things about it and can agree myself, but it is also the only model I have real experience with, and it also has it's shortcomings. And it is a bit expensive as well, last time I checked about $300.
There are cheaper models, without maps, without compass. All of them do the job, just not as comfortable. If you just want to try it, all you need is _some_ gps device which allows to enter specific (cache) locations and gives you some kind of hint how far it is from where you are to that point, and if possible the rough direction. Pretty much all devices can do that. Even newer phones support that I believe. Do you have a gpx device in your car? Most of them can be used for geocaching as well.
All in all you have lots and lots and lots of possibilities and it really depends on your taste and money.
